Probate Court Procedure: Is There Something I Can Do in the Meantime As a Heir

My question involves estate proceedings in the state of: NC
My Father very recently passed unexpectedly and he stated to me on more than one occasion he did not have a will. He said he thought with having real estate it would work better for us that way.I was told his wife has first option to get bonded for executor but the children has to wait 30 days to apply.
All the children already know she will not be fair as executor. What can we do in the meantime? The hospital decided he was not able to make his own medical decisions but 2 days after he was home from hospital on hospice terminal care his wife had him in town all day doing banking business and who knows what else, would this be legal if he could not make his own medical decisions due to mental confusion? And is there a easier way to prove someone was actually married without having to go to every county for every state to look for a marriage license and certificate? Sorry, just lost here trying to find some ground on where to start..Thank you in advance
