Non-Compete Agreements: Texas Non-Compete for a Low Level Employee

My question involves labor and employment law for the state of: Texas

I work for a managed services IT company, and for the last 2 years I have been working at a contract we have at a rural hospital as a low level Systems Admin. Well after 3 years on the contract, my company lost it. When the new company came in, they offered me a much better opportunity for my family. I accepted and turned in my 2 weeks. Then my current employer sends me a packet of papers they had me sign 1 year ago, and mixed in the middle of it was a non-compete agreement that I never saw (stupid me). It is not by itself, but mixed in with the new hire packet they put together including all the other policies, then at the end of the packet, they had us sign.
As an older employee I was told its all existing policies, so I just signed (stupid).

The new company has offered to pay any legal fees and really wants me to push through with this. My old company states they spoke with their attorney, and if I dont stay working for them, they will file an injunction to stop me working for the other company.

Right now, the new company is waiting for me, still asking me to leave anyhow and they will back me, and I feel trapped working for the old company. Do I have any recourse? The new companys owner has told me non-compete agreements are not for low level employees like me, and it would not be legal anyhow and the old company is trying to use scare tactics so I wont go to a competitor.

Any help is greatly appreciated.
