Speeding Tickets: Paced Speeding Stop Turns into a Vehicle Registration Violation Texas

Hello, I have a question pertaining to a paced speeding stop.

Today I got pulled over for speeding. I had passed a cop who had claimed to be going 45 mph (the speed limit) and he said the reason he pulled me over is because I passed him while he was going 45 mph. There were a lot of cars on the road that were going the same speed as me, if not faster.

During the stop, I told him I was audio/video recording and I do not answer any questions. I told him that I did not know I was speeding (I was honestly going about 47 mph) and he looked at my registration, it has unknowingly been expired for 1 month (Texas grace period is 5 days i think). He told me he was not going to issue a citation for speeding, but he was going to issue a citation for the expired registration.

My question is, was this a legal traffic stop? 2mph over the speed limit and he did not even use a radar. The other 50 cars on the road were going the same speed if not more. So why me? The only thing I did differently than the other cars was honk at a car that wasn't moving at a stop light (He mentioned this, I told the officer that the car was impeding traffic, so I honked). And I did try to pass him at one point earlier by signaling my blinker, but he did not let me over. At no point was I recklessly driving. The citation even says (Reason pulled over: Speeding)

If this was not a good traffic stop on his part, Is there anyway I could get out of this ticket by telling the court he did not have a good cause to pull me over? Therefore making the entire traffic stop invalid?

Also, about 3 minutes before the stop I did pace the cop my self, and he was going about 50 mph. Not sure if that changes anything, just wanted to give as much information as possible. Thanks!
