Creating a Power of Attorney: Can You Issue a Power of Attorney in Relation to a Lawsuit

My question involves a power of attorney in the state of: FL

1) Can a POA be as specific and/or as limiting as only granting POA for decisions regarding a specific ongoing lawsuit?

2) If a defendant in a lawsuit has a heart attack from possible stress along with age, causing some minor brain damage and doctor recommended 2 months of rehabilitation, what would be the most proper and civil way to handle said lawsuit and current legal bills without stressing the person too much?
----I'm thinking maybe you could file to extend the lawsuit
----And as far as the legal bills maybe kindly ask for the firm to just wait two months until the person is better...but what if they say no thanks pay us now?
