Consumer Law Issues: If You Pay in Full is That Considered a Contract

My question involves a consumer law issue in the State of:

I have some friends who want to get out of their contract at a particular Martial Arts school. The school moved, the curriculum changed, the instructors changed, etc. Basically they are very unhappy with all of the sudden changes. Unfortunately they have paid in full. I am unsure as to whether this counts as a contract or not. They received no paperwork and signed nothing, just gave a check for the 12 months total.

If it is considered a contract, is it null and void due to the fact that they received and signed nothing? If it is not a contract is there a way to get payment back for the rest of the months?
