Why is it Hard to Sue Somebody With More and Better Lawyers

You always hear people say "You can't sue this company! They have more/better lawyers! You would definately lose!". This doesnt make sense to me if the reason you are suing is undeniably just. For example: Youtube. If a content creator posts a parody cover of a song, with different lyrics, OR posts the playing of a video game with commentary and critisisms, and many other specific cases, they cannot be taken down, as Fair Use protects the creators from getting copyright strikes and attacks. HOWEVER, these videos are still being flagged and shutdown. It doesnt make sense to me why the content creators cant take this to court; their arguement is undeniably right. They did nothing wrong, and as such, I dont see how more/better lawyers can change that.

If I created a game commentary/critisism, and it got flagged, how does having a better legal team ruin the justification of my legal actions against them? This whole subject doesnt make sense to me, and i would just like clarification. Maybe Im overlooking something.
