Speeding Tickets: 48 in a 35. (Not Guilty vs No Contest

My question involves a traffic ticket from the state of: Texas

I was delivering packages in a area I've been never been in before and turned on the street and got pulled over by a cop for speeding. After the ticket I went back the same way I came from to see if I can find a speed limit sign because I didn't see it the first time around. On my way back to circle around I saw the cop sitting in the same spot he was sitting in before he pulled me over as if he knew that people would likely speed in this area. I made a u-turn and drove until I came across the speed limit sign which did say 35 but was covered by two or three signs or obstacles to where you could see it until you pretty much got right up on it. After passing up the sign I saw the same cop still sitting in that same spot as if he was waiting for his next "target". Is there a way to argue this in court? I don't plan on having an attorney or anything. I only been to court one or two other times 4 traffic violations. Should I plead not guilty or no contest for this situation?

Also, lost my speeding ticket.. and I didn't have insurance but might have told the cop that I did. What should I expect?
