Traffic Accidents: Motorcycle-Car Crash and Settlement for the Policy Limits

My question involves an injury that occurred in the state of: New Hampshire

I was involved in a car-motorcycle crash and I have been offered the policy limit for the owners of the car(the drivers parents) from what I can tell from online searches the driver lives with their parents and has had a bankruptcy in the past.

I feel the policy limit may not cover my future medical needs, what are my available avenues to get more compensation?

I have called a few places and they are saying I should take the settlement however the settlement states that I cannot make any further claim against the policy, those named in it or anyone else who is not named.

I have read about umbrella policies but how would I know if they have one or not?

I also in saw another thread as well as one of the people I called using something called an "affidavit of no other insurance or assets" before signing the settlement release, would this go to the parents, the driver or both? Also what costs would be associated with getting this affidavit?

I found this example in the above thread, would I need a lawyer to get this filled out:

I am aware if false informaton is provided etc etc.

I have worked mostly in e-mail with the at-fault insurance adjustor so I have things in writing, they verbally told me the policy limit is what they are offering and that I cannot get anything more.

I have asked them for a copy of the declarations page

I asked the adjustor if they had a umbrella policy and got this response:
"I already explained that the policy limits is the only available coverage. Umbrella policies “normally” are not sold to anyone with a policy with limits less than $300,000.

There is no additional money above the policy limit that I have offered to you."
