Service and Repair: Truck Stolen from Mechanics Lot

My question involves a consumer law issue in the State of: Minnesota

I dropped my truck off on Monday morning at our mechanics shop for an oil change and to quote a few other things. Parked it in the parking lot gave the keys to the front desk and left. Drove past Monday evening and it had not moved so I figured he hadn't gotten to it yet. The next morning, Tuesday, I drove past on my way to work around 7:45am and it was not in the parking lot, I assumed it was in the shop being worked on and quoted. Drove past again on my way home, still no truck in the lot, thought he must have kept it inside so he didnt have to plug it in overnight (its a diesel and it was 10 overnight that night). On my way into work today, Wednesday, he calls me and ask's if I came and took the truck for some reason. I said no I haven't. He said well I have the keys here with me in the shop and was about to get to work on it and its gone, it must have been stolen. That means it had to have been stolen Monday night and no one realized it was gone until Wednesday morning. It's kind of hard to miss, its a big black F350 extended cab with a topper, its like parking a bus for f**ks sake. How do you not notice that its gone? I go there and file a police report. I call my insurance company and they are saying that there has to be a claim filed with the shops insurance company before they can do anything. I call the shop, they talk to their insurance company, and their insurance company says that since they do not have a secured lot it is up to the insurance company covering the vehicle. How does the insurance process work in cases like this? I feel like they are playing hot potato while we are out a vehicle.
