Business Disputes: Should I Sign My Clients Under LLC

My question involves business law in the state of: California

I left company as independent contractor and took few clients with me. I started my own LLC.

If i sign contract with these clients under LLC would that protect my assets against my ex boss suing me for stealing clients or non compete agreement breaking??
