Compensation and Overtime: What to Do if You're Not Paid for All Hours Worked

My question involves labor and employment law for the state of: New Jersey.

I am employed at a small daycare that knowingly does not follow all state regulations.

I am scheduled to work 8am to 5pm (3pm on Thursdays), but I'm not always able to leave by 5pm. I keep track of my hours which I, then, send to my boss at her request.

Last week, I saw my paycheck for the week before was much lower than expected. When I questioned it, I found that I am not getting paid for time worked after 5pm. So, not only am I not getting my overtime (1.5x my hourly rate), but I'm not even getting paid for straight time. Based on the calculations I have done, in the course of a year, this will add up to over $900 in unpaid hours NOT including overtime).

Furthermore, I have yet to fill out any forms including my W-4 and I-9, and I have not been receiving paystubs, so I'm unsure of how much of my paycheck is being withheld.

Short of finding a new job, which I am currently in the process of doing, what actions should I take? I have already made a WRITTEN request for the appropriate forms that I should have been given upon hire as well as my paystubs. However, I am not optimistic that my employer will comply with my request, and I want to know what actions I can take.
