Payment: Deadline Breach\poor Work Quality\balanced Owed Dispute

My question involves a consumer law issue in the State of: Texas
We hired a contractor to remodel our house this past summer. He missed a verbal agreement deadline and also has done poor quality of work. He is threatening to sue us for a remainder of a balance he has inflated. I signed an estimate at the beginning of the work and gave him five thousand cash. He always asked for cash. I took pictures virtually every day of the progress which was slow. There were days they did not work a whole day but just a few hours. There was also a work stoppage because my contractor's painter sub out the work to someone on craigslist. I just happen to show up the day this craigslist recruit was working on my house. He had his son helping him, he couldn't have been more than 10 years old. I also made a complaint with the BBB because his work was so poor he didn't insulate an outside wall of my kitchen and discolored\chipped\scraped the new granite when installing. I am disputing what I owe him because I have collected estimates on how much it would be to repair his poor work and also by missing a deadline which caused us to miss 2 appraisals for a home equity loan. By being late, we incurred a charge for extending an interest rate lock in. He agree in writing the there was a verbal agreement on the deadline. I have pictures, texts, and an approved recorded conversation to back up all my claims. HELP!
