Auto Insurance: Can Insurance Deny Coverage to the Insured

My question involves insurance law for the state of: Florida
I was parked legally in a parking lot. A woman entered the lot, went over 2 curbs on an island and then slammed into my vehicle. We don't know if she had a medical emergency. She did approx. $3,000 damage to my vehicle. She was cited for careless driving. Her insurance company said they are investigating to see if she is covered because she may have had a medical emergency. Also her car was still registered to her husband who died about 10 years ago. Since the insurance company sold her a policy, can they deny her coverage? I don't have collision coverage so what is my option if her company denies her coverage. How long can her company make me wait for them to investigate to see if they are going to cover her? Can I pay for the repairs
and sue her if her company will not pay.
